Research carried out in partnership by animal scientists & ecologists is demonstrating that: 1. Cattle reduce emissions by consuming byproducts we cannot 2. They up-cycle these inedible foods into protein we can consume (a net protein gain for a hungry, growing planet) 3. They increase soil carbon sequestration. Nestled in Spain’s northwestern corner, Galicia is steeped in history, culture and a strong tradition of agriculture. With connections to Portugal (the Galician language to my ear has many words very similar to Portuguese) and to their Celtic brothers further north (with whom musical roots are deep), there is a proud history and a growing future. One of its most distinctive features is the hórreo, a traditional elevated granary built from stone and wood, symbolizing the agriculture heritage of the region. Other than how much greener the lands around us were, the first thing that stood out to me from the landscape were these iconic rectangular structures that many pelegrinos wander past without understanding their purpose.
